This can be used to make heavy mixtures.

If you are beating cream and sugar, then you should use speed 6 for it. This speed is used to mix the batter well. For whipping of eggs and cream to make them fluffy. Then use a fast speed 8. Speed 9 works the same as speed 8 but it can do your work a little faster than speed 8. But keep in mind that the amount of the mixtures should be less otherwise it will come out of the bowl.
